A New Beginning:

This summer I am away from home and discovering new passions. I am living with a family, working at Dutch Bro's coffee, taking an online class and more. Since I have been at college I have been developing a love for baking and discovering new delicious treats. I have decided that this summer I would start baking more and writing about what I bake on this site. These recipes are not mine, I am using ones I find just to learn and have fun! FINAL DAY!!! The 31st. :)




I decided for my last day to have fun! I wanted chocolate because that is the best and I wanted to make it look cute. So I decided to go a good old fashion bundt cake and make it look like a worm. Super easy to cute and decorate it how ever you like. Pictures will be up soon! Thanks all for following my month of baking :) Can't believe/super excited/sad to say its over! I will most likely continue to add recipes every so often to this as the years go on!

Day 30th SUGAR COOKIES!!!







Kris and I had decided that we were going to make sugar cookies for today's treat. I got really busy chatting away on Friday night that I did not realize that Kris had gone to bed. Her and I were going to make the dough the night before..so because I did not want to be loud I went and mixed it all up with the mixer in my bed room. The next day Kris asks why there is a empty bag of flour in my room trash can. haha so the next morning after soccer, we cut all the cookies out into fun shapes and baked them. She had a squirrel, moose, snail, porcupine, fox, bear, and more. Then since most of those animals are supposed to be brown, I decided that we should just do crazy colors instead. They tasted great at our family dinner this evening. Glad I have this recipe now! :)

July 29th Banana Bread

Day 28 Reese's Peanut Butter Cupcakes





We made chocolate cup cake batter and then we put the Reese's cup into the middle of the batter and added more on top. Then while they baked they did sink a little in the middle of the cup cake but they turned out great. Then we put chocolate frosting on the top and melted white chocolate and drizzled it on top. They are really good and the picture of the inside of the cup cake actually has to reese's cups in it. The cups don't even melt and added just the right amount of peanut butter to each bite!

Day 27 Mint Brownies




Today was kinda a cheap day..but they sounded so good! We made a regular brownie mix from the box..I know! But we got mint candies like the Andies you get why you go to Olive Garden. And right when you take them out, you put all the candies on top of the brownies to melt. Then after they melt use a knife to smear the candies like frosting and let it harden. We added sprinkle and they tasted great! :) Pictures coming

Day 26 Blender Cookies





Today I made Kris Flinn's famous Blender cookies! They taste amazing and are just like oatmeal cookies but you put the oatmeal in the blender before you bake them. This way it is very thick like more flour is added. Kris likes to just estimate her measurements and I always follow the rules so we like to talk trash at each other while baking together. Marshall helped by pressing the blender button haha. We made these because they happen to be Mitchell's favorite and we wanted to send him some. They taste great. I am waiting for the camera to charge so pictures will come soon! Here is the pictures and those are the new shoes that marshall and I got together! haha my favorite color, it was buy one, get one 1/2 half.

Day 25 Raspberry Cream Pie






Tonight I made Raspberry Cream pie for my coach Nate and his wife Darlene Huntsinger. This is Nate's favorite pie that his mother used to make for him. I made the crust earlier today. Then we all went to Meghan and Dan's house to make and eat the rest. The filling is layer of cream cheese and then raspberry topping. It was really good. The important part is to let it cool in the fridge before serving it because it will all just fall off the top when you cut it to serve it if it is not hardened. Thanks for the recipe Coach! It tasted great!

Day 24- Brownies

I am starting to get really tired of baking..haha If I am being honest. But brownies sounded great tonight so I made brownies and then put heath bar pieces in it and chocolate chips. Really simple but really good! :)

Day 23! Tres Leches Milk Cake

Today was the famous cake called Tres Leches. It is really good and I made it last year when I went to the Borrelli's. Pictures to come! It looks great! :)
Recipe:
1 1/2 cups of flour
1 teaspoon baking powder
1/2 cup unsalted butter
1 cup of white sugar
5 eggs
1/2 teaspoon vanilla extract
Mix all this together and put into a 9 x 13 and then bake for about 2o minutes at 350.

The frosting
2 Cups of whole milk
1 can of condensed sweetened milk
1 can of evaporated milk
 Combine these three milks and pour them into the cooled cake.

1 1/2 cups of whipping cream
1 cup of white sugar
1 teaspoon of vanilla extract
Then whip these together and put it on top of the cake and then put it into the cake into the fridge to cool completley.

day 22! Cannoli's With the Borrelli's

Tonight we made cannoli's and deep fried them and then made a cheese filling and put it into them! The deep frying was a change from our baking for the night. They taste great but did not turn out right at all! haha We tried and that is all that matters...pictures will come soon! And the recipe!

Day 21 Pignoli Cookies

Today I am at the Borrelli's House in Washington and making Italian desserts. Pignoli's are Becca's favorite so that is what we decided to make.
Recipe:
1 Cup almond or macaroon paste
3/4 cup sugar
1/2 teaspoon vanilla extract
3 large egg whites
1 cup pignoli nuts (pine)
Mix all together and then drop 1 tablespoon of batter onto cookies sheet and bake for 15 minutes at 325 degrees. They taste great and are super easy to make.

Day 20th The Anderson Biscuits


I can't believe that today is the 20th! Almost done :) Well this morning I baked biscuits at Matt and Amy Anderson's house. This is Dan's older brother and his wife. We came to visit for the Manchester United game and I asked what they wanted me to bake. I herd that Mr. Anderson's biscuits were the best... so it was decided! I made them this morning for breakfast. They were very good, a little bland but usually biscuits are. Adding jam was good idea, I think gravy would have been better! Any ways..were off to visit Seattle and then to the game!

Day 19th On the Road to Washington.


This morning my baking started at 7am because I was leaving for Washington at 8. I had it all planned out and ready for the morning. I made a favorite for the road that the Osborne's have welcomed me in to. I had pretzels and hershey's kisses on top. I baked them in the oven for about 10 minutes and then when the kisses were just melting I pushed peanut butter m&m's into the top of them. Then put them into the fridge to harden. Into a bag they go and into my tummy in the car! :) They are the best! Thanks Peyton, Davey, and Jonah!

Day 18th My Families Favorite Chocolate Chip Oatmeal Cookies


Today I wanted to bake cookies for our road trip tomorrow to Washington. I decided to make my families favorite cookies because Karissa and Jared were coming over to hangout. I had all the ingredients and decided to make the batter before going to work. When I got home I just mixed it one more time and then put them in the oven. While mixing all the ingredients I realized that I did not have regular crisco, I only had "butter flavored" crisco. The batter smelled like butter and even after they were baked they tasted and kinda smelled like butter. They did not taste bad, just different from what they normally taste like, so now I know what not to use next time. I can't give the recipe away..but if you ever want some I will gladly make them for you! :) This makes me miss home.

Day 17-Chocolate covered Strawberries!



I baked a strawberry cake with a strawberry gelatin mix in it. Then while I was baking it I melted white chocolate and dipped strawberries in it and put them in the fridge. Then after the cake was baked I burnt some of it and I had to cut some of it off..but it still tasted great! Then I covered it in chocolate frosting and then I drizzled white chocolate over it and then put the strawberries on top. It was a good snack after the first half of the womens world cup, even though we didn't win! :(

Day 16 Corn Bread


Today was a "not dessert day". I still baked and it was still delicious but it was not super duper sugary. My mom used to make this for us and I love it so I decided to make it for dinner. It is the easiest thing ever and taste great. 
Recipe:
1 stick of butter melted
1egg
1 jiffy box corn bread mix
1 can of whole corn
1 can of cream of corn
Put it all in a bowl and mix it up. Turn the oven on to 350 and spray a 9 x13 pan. Then pour the mixture into the pan and bake for about 20-30 minutes. It is not going to be super fluffy like most corn bread, it is more moist and kinda falls apart. But it is so good that way! Also when we used to make it we would forget that you pour the whole can of whole corn in the bowl, including the water! Try it out, it is great :)

Day 15 Black and White Hearts




Today's desseert was black and white heart cookies! They looked really good and I can freeze them and save them for later so I am decided it was perfect! After starting to mix it all, I realized that I did not have enough flour. But I had some help from Kris, so got some and rolled the dough for me and put the dough in the fridge for me. When I got home I rolled them out and cut the dough into the heart shape, baked them for 7 minutes. After burning one batch of chocolate chips, I made another with some shortening on the stove and then dipped the cookies into it and put them on the cookies sheet to cool. I should have used waxed paper so they would not stick to the sheet. Anyways they turned out great and look so cute. Marshall, "my little bro" said that his heart was broken because I chose Mitchell his older brother! :) haha jk

Day 14 STRAWBERRY SCONES



Today I went and baked at my dear friend Chelsea's house! She had some strawberries and I found a recipe for scones, so we put them together! As we were baking and chatting away we noticed that the batter was falling apart and not sticking as much so we added more milk and they turned out great! Then after forming them and sticking the strawberries in them we baked them for about 15 minutes and watched a Tyler Perry-Madea movie! haha When we went to put the glaze on I realized it was not thick enough because I read the recipe wrong. So we started over and it was much better. Added a scoop on top and some white chocolate sauce to each scone and they were finished! They tasted great cause they were still a little soft in the middle. I am glad we choose these and I had a blast catching up with her :)
Here is the recipe I found. 
Spring Berry Scones:
Ingredients- 
3 cups of flour
1 tsp. baking powder
pinch of salt
2 tablespoons of sugar
7 tablespoons of butter
1/2 c. plus two teaspoons of milk
this was not enough for us, so add a little more to your mixture and if it gets to wet add more flour.
Mix your dry ingredients together first, add your butter and mix well and then add milk.  You can double or triple this recipe and freeze the parts you want to use for later.  For what you want to make at the time form a dough ball and roll it out into a round shape, cut it like a pie and then press into the top whatever berries or nuts or ingredients that you would like.  Make sure you press them in firmly but still keeping your scone shape. 
Bake at 375 degrees for 15-20 minutes.  Let your scones cool for 5 minutes and then ice them with a simple powdered sugar and milk glaze.  (Cup of powdered sugar and teaspoon to 1 1/2 teaspoons of milk).  Simple, fresh out of the oven yumminess.
